Grilled Veggie Quesadillas
In an effort to eat healthier, I have had to look for creative ways to make dinner, The other day, I decided to make these veggie quesadillas. And I will have to say they were a hit. Here is another excellent recipe for Cinco de Mayo. This recipe would appeal to the vegetArian in your family. Every once in awhile I try to have a meatless meal, and this does the trick. This is also the perfect meal for Spring and Summer.

Ingredients
- 2 medium zucchinis (sliced lengthwise)
- 2 medium squash (sliced lengthwise)
- 1 red bell pepper ( cut into strips)
- 1 tablespoon of olive oil
- 1 teaspoon of Tastefully Simple Simply Southwest Seasonings Rub
- Package of flour tortillas
- Cheese
- Salsa of any kind
- Sour cream (optional)
Directions
- Oil the grate of your grill with the olive oil
- Turn it on the grill and set it on low heat
- In a large bowl combine the sliced zucchini, squash, bell pepper, and simply southwest seasonings.
- Place vegetables on the hot oiled grill.
- Cook to 3 to 4 minutes per side or until vegetables are cooked.
- Remove from the grill.
- Take the tortillas out of the package. And place cheese on one side of the tortilla.
- Divide the vegetables among the tortillas. How many tortillas you use is determined by how many quesadillas you want to make
- Top with cheese and the remaining tortilla.
- Cook on grill 3 to 4 minutes per side or until cheese melts.
- Serve with salsa and sour cream as dipping sauces
- Enjoy!!!

We do Quesadillas on the grill all the time – I can not wait to try these. I have a nice tool that I put mine in that makes them super easy to flip while keeping them together.

These do look tasty good. I like veggie dishes. A lot. Now if I could get the family to slow down on the meat and amp up on the veggies… perhaps these might help. 🙂

My vegetArian daughter would really love this. I love to have my meat in anything that I eat but I sometimes compromise for her. I may do thins upon my return and see how she likes it.
