Chicken Fajitas Pockets

I have shared with you before how much we love grilling during the warmer months, not only does the food taste even better on the grill but it is also a huge saving on our electricity. Not using the oven or stove turns into savings for my checkbook. We don’t have to run the air conditioning that much and our electric bill is lower. Today I am going to share with you a really cool way to make chicken fajitas in a pocket. This is clearly a no mess and quick and easy meal. One that I am sure that will become one of your family’s favorites as it is one of mine.

Ingredients For Chicken Fajitas Pockets:

  • 1 large red bell pepper cut into slices
  • 1 large green bell pepper cut into slices
  • 1 large onion cut into slices
  • 1 lb of chicken cut into strips
  • My Taco seasoning mix ( you can find the recipe here)
  • Nonstick cooking spray
  • Aluminum foil
  • Flour tortillas
  • Optional: sour cream, salsa, and avocado

 

Directions For Chicken Fajitas Pockets:

  • Preheat your grill.
  • Place a sheet of aluminum foil on a table and spray with nonstick cooking spray.
  • Put your sliced vegetables on the aluminum foil.

  • Take your chicken and dip it into the taco seasoning mix.
  • Fold the pack to make a pocket to cook on the grill.
  • Cook on the grill until done.

  • Open up the package and serve with flour tortillas and refried beans. This is great to serve when you are craving some Mexican.
