With Cinco de Mayo just around the corner, I decided to share this Quick and Easy Burrito Casserole with you. You won’t believe how easy these are to make. This is the perfect dinner for those nights you are on the go; we love it on nights we have soccer games.

Ingredients 

  • 1 package of Frozen burritos ( you can use whatever kind you like)
  • 1 14 oz can of enchilada sauce ( I used the green one as it has a little kick to it)
  • 1 ½ cups of shredded cheese ( use whatever kind is your favorite or whatever you have on hand)
  • 1 ½ cups of diced tomatoes (optional)
  • 4 cups of shredded lettuce
  • Sour Cream (optional)

Directions

  • Place the burritos in a casserole dish. Cook 20 minutes according to the instructions on the package.

  • After 20 minutes, take the burritos out, cover them with enchilada sauce and cheese, and cook for another 10 minutes.

  • Once the burritos are done cooking, top with tomatoes and lettuce.
  • Serve with sour cream if you like
  • Enjoy

And in 30 minutes you will be sitting down to dinner, See I told you that this was a perfect meal. I love how you can use different burritos so you won’t have the same dinner twice. You can always change it up by using different cheeses and different types of enchilada sauces.
