Mashed Potato Cakes Sharing the Love of Potatoes?

Our family is very diverse. We all have things we like and dislike and they aren’t always the same thing. But if you ask anyone that knows our family they will tell you that the one thing that we have in common besides loving each other is the love of the potato. I know right who would have thought that one food we would all love. Even Allie and Gigi, the fur babies will come running when they smell potatoes cooking. They can be in any form but their favorites are french fries. Raul, the hubby uses potatoes in  everything. We all love mashed potatoes. And I think the biggest disappointment we all had was when Taco Bell got rid of their spicy potato tacos. Because of our love for potatoes, I am always looking for new ways to cook a potato and to show love for my family. Just recently I made these Mashed Potato Cakes in the Air Fryer and they are to die for.

But before I get to the recipe, let me share a little bit about why it is important to share the love and why I wanted to team up with Design Bundles’ on their Share the Love Campaign.

First I miss my older girls a lot. I miss the times when they all were just a short drive away. I miss being able to go out and go to events to meet people and basically just to chat. That is one of the reasons Chats from the Blog Cabin, the Facebook/ Youtube Talk Show that I turned into a podcast was created. One day, I realized maybe I am not the only one. 

Throughout the pandemic, loneliness is an increasing concern for many of us. More than ever, people are looking for different ways to spread love – whether that’s to loved ones or simply sharing a  smile with a stranger. If decorating your front door for the delivery drivers to see, writing cards, or just simply enjoying time  with a loved one, Design Bundles has tons of SVG Files, tools and inspirations to help. They have pledged to be a part of the solution and to help spread positivity through creativity and crafting.

The meaning behind Design Bundles’ Share the Love campaign is to try and help shine a light in dark times. Spreading positivity and joy is food for the soul, and can be so much fun to dive into. As well as being craft and creation addicts and advocates, they are helping to share resources and helplines to help battle loneliness for everyone in need. 

So when I was offered a chance to work with them I had so many ideas pop in my head of what to do and that has gotten me focused on service. If you follow me on Instagram, you will see some of the things I have done recently. But as always service for me begins in the home so I knew I had to Share the Love with my family by creating these Mashed Potato Cakes. Hope you enjoy them as much as my family did. 

Mashed Potato Cakes 

Mashed Potato Cakes Air Fried

INGREDIENTS:

Ingredients
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese 
  • 6-8 strips bacon, cooked and crumbled
  • 1/4 cup green onion, diced 
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs, beaten 
  • 1 cup Flour 
  • 2 cups panko crumbs

DIRECTIONS:

Fry the bacon until crispy and drain on a paper towel until cool. 

Crumble into small bits. 

Place the bacon bits into a large bowl.

Add your mashed potatoes, cheddar cheese, and green onions.

Stir to combine

Line a baking pan with parchment paper. 

Place all of the mashed mixture on the baking pan.

Spread the mashed potato mixture evenly across the pan. 

Place it in the freezer for 30 minutes.

Use a circle cookie cutter and cut out circles of the mashed potato mixture. 

Set to the side.

Continue until you have all of the circles cut out.

Prepare your dredging station. 

Flour in one bowl

Flour in one bowl, beaten eggs in the second bowl, and the panko crumbs in a third bowl.

Dip your potato cake into the flour, then eggs and finally the panko crumbs.

Place the potato cake in your Air Fryer.

Make sure to ONLY do one layer of the potato cakes in the Air Fryer. 

Set the temp to 370 for 6-8 minutes. 

For best results, serve immediately, while hot and crispy.

Air Fried Mashed Potato Cakes

Ingredients
  

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 6-8 strips bacon cooked and crumbled
  • 1/4 cup green onion diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs beaten
  • 1 cup flour
  • 2 cups panko crumbs

Instructions
 

  • Fry the bacon until crispy and drain on a paper towel until cool. ( You can also do a shortcut and use already cooked bacon and just heat it up)
  • Crumble bacon into small bits. 
  • Place the bacon bits into a large bowl.
  • Add your mashed potatoes, cheddar cheese, and green onions.
  • Stir to combine 
  • Line a baking pan with parchment paper. 
  • Place all of the mashed mixture on the baking pan.
  • Spread the mashed potato mixture evenly across the pan. 
  • Place it in the freezer for 30 minutes.
  • Use a circle cookie cutter and cut out circles of the mashed potato mixture. 
  • Set to the side.
  • Continue until you have all of the circles cut out.
