Homemade Ice Cream Sandwiches Hit the Spot

This past weekend, we went to the beach for a short mini vacation before school starts today. Yep, two of my girls, went back to school today. (Insert Happy Dance here) But seriously the weather at the beach was beautiful except that it hot and humid on Saturday. After we came back from the beach, I decided to make some homemade ice cream sandwiches to beat the heat.
Here is something you probably don’t know when I married my husband, he told me that he never had a birthday cake when he was growing up. Growing up in Mexico, number 9 of 10 kids there wasn’t a lot of extra money i.e. pesos to buy sweets. Most days his meals consisted of something with rice or beans and there were hardly any meat at meals. So to have sweets was truly an occasion.
In fact, that is one thing that I know will bring a smile to his face, baked goods. So when I saw the new Nestle Toll House baking mixes at my local Kroger, I just knew I had to grab up all four varieties

so Raul could have some more baked goods. See small acts like this can change someone’s world, and that is huge belief behind Nestle Toll House. And I love that they had no artificial colors or flavoring in their mixes.
But before I go on about this I just have to share this picture. This was taken back when Gracie was a baby. The girls were their grandparents Papa Felipe (Papa PP ) and Mama Lucita and Gracie was the chili pepper.
Aren’t they cute? So back to the baking mixes.
I knew when I saw these mixes on the aisle with all the baking needs I knew I had to get them because some of these mixes have butterfingers pieces in them. And butterfingers happen to be my favorite candy bar. But I wanted to go beyond the basic Brownie, and that is where the idea of the homemade ice cream sandwiches came into my head.
Homemade Ice Cream Sandwiches With NESTLÉ® TOLL HOUSE® Brownies& More Baking Mix with Butterfingers
Ingredients
- NESTLÉ® TOLL HOUSE® Brownies& More Baking Mix with Butterfingers
- ice cream
- wax paper
- washi tape
Directions
- Make the NESTLÉ® TOLL HOUSE® Brownies& More Baking Mix with Butterfingers according to the package directions
- After the brownies have cooked, put them in the refrigerator to cool off.
- While Brownies are cooling off, cut strips of wax paper as this will be ice cream sandwich wrapper.
- Take the brownies out of the refrigerator and cut into squares.
- Take one brownie out of the pan and lay it on one of the pieces of wax paper.
- Top that brownie with a scoop of ice cream, I used vanilla but you could use any flavor you like.
- Add another brownie on top.
- Wrap it up like a little package in the wax paper and use the washi tape to secure it.
- Place in freezer for a while.
- Take out and put on a plate for all to enjoy.
I love that a brand that I grew up, I can now share with my husband and my girls and their friends. And I also love that it combines two of my favorite things brownies and butterfingers.
