Here is a little cheesecake tidbit for you. Made in 2009, the world’s largest cheesecake weighed in at 4,700 pounds. There’s no word on how many pounds folks packed on while eating it. I know I gained weight just thinking about it.  To celebrate National Cheesecake day I am going to bring back on old recipe using crescent rolls and cream cheese and it is oh so yummy.

Cheesecake Squares
It is quick, easy and delicious! Everyone who has tried these has asked for the recipe!
Ingredients:

  • 2 packages crescent rolls (can use reduced fat)
  • 2 8 oz. packages of cream cheese (also use reduced fat if you like)
  • 2 eggs, separated
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • Pie filling of choice, optional

Directions:

Preheat oven to 350 degrees F. Spread one package of rolls in bottom of 13x9x2 inch pan. In medium bowl mix cream cheese, egg yolks, sugar and vanilla until light and creamy (about 4 minutes). Spread mixture over rolls in pan and top with the other package of rolls. Brush top with egg whites. Bake for 25-30 minutes until top is golden brown. If desired, top with pie filling when almost done baking (last 5 minutes or so).

These are the absolute best. They never last a day in my family.
