2 Quick and Easy Back to School Meals

With school about to start up in a few weeks, I know that the easy days of summer will be a thing of the past. I will have school dropoffs and pickups. And Mikaela will be on travel ball team so she will have practice some nights of the week and then games on weekends. And in all of Gracie’s activities as well then this momma is going to very busy.
I have always wanted to be the type of cook, which my mother-in-law, Mama Lucita, is. It is nothing to sit down to her table in Mexico to an honest to goodness made from scratch home cooked meal. But with being on the go all the time, that isn’t always possible for me to do. So now the biggest question in our house every night is what’s for dinner? Yes, I will admit that we do eat out sometimes, but I always try not to but sometimes it is just unavoidable.
That is why when I shop at our local Walmart I take some time looking up and down the aisle to finds meals that are quick as well as delicious. This past shopping trip I picked up a package of chicken, some Pace Salsa, Campbells Chicken Noodle Soup and a package of refrigerated biscuits. Why Pace Salsa, you ask because it is a little kick to it. Of course not, the kick like my husband is used to, but you can always add more jalapenos for that extra kick. And I love how it is made with handpicked vegetables, and it is so chunky.
And Campbell’s Chicken Noodle Soup was a no-brainer, it is a soup that I totally grew up eating. I love the flavor of it, and when I pair this can of soup with my waffle iron biscuits, I not only got a meal that was quick and easy but also affordable.
I came up with some quick and easy recipes and put my own twist on it. And it doesn’t get any easier than this salsa chicken in a crockpot and Chicken noodle soup with waffle iron biscuits. You literally just need a few ingredients and of course a crockpot and a waffle iron.
Salsa Chicken
Ingredients for Salsa Chicken
- A package of chicken breast or chicken tenders
- A 24 oz jar of Pace salsa
- A bag of boil in bag rice
- An avocado
- A crockpot
Directions for Salsa Chicken
- Take out crockpot, plug it in and set it on low.
- Add your package of chicken breast.
- Pour the entire can of salsa over the chicken breast,
- Cover and cook on low for about 6 hours.
- Before you are ready to eat, boil your bag of rice according to package directions.
- Take the rice out of the bag.
- Place the rice on the plate.
- Cover the rice with pieces of chicken and salsa.
- Garnish with avocado (optional)
- Enjoy

- Place the rice on the plate.
- Cover the rice with pieces of chicken and salsa.

- Enjoy
Campbells Chicken Noodle Soup with Waffle Iron Biscuits
Ingredients:
- Family size can of Chicken Noodle Soup
- A can of refrigerator biscuits, any brand will do.
- Waffle Iron
- non-stick cooking Spray
- Cheese is optional to add to the meal. You can melt it on the biscuits while they are hot or add to the soup.
Directions
- Open the can of Chicken Noodle soup and heat.
- While soup is heating up make your biscuits.
- Preheat waffle iron.
- Spray the waffle iron with non-stick cooking spray.
- Place biscuits (2 at a time) into the waffle iron for 2 minutes.
- Remove using a spatula and then repeat until you have made the whole can.
- Family size can of Chicken Noodle Soup
- A can of refrigerator biscuits, any brand will do.
