Looking for a different drink to celebrate Cinco de Mayo than look no further than this Pineapple Strawberry Pina Colada. Cinco de Mayo is celebrated more here in the United States than in Mexico, most people think it is Mexico’s Independence day but in fact it isn’t.  That day is September 16. INGREDIENTS

  • 2 cups ice
  • 2 cups diced pineapple
  • 2 cups strawberries
  • 3 1/2 oz Coconut Rum
  • 2 oz Bacardi
  • 2 cups of Pina Colada mix
  • 2 Strawberries for garnish

INSTRUCTIONS

  • Dice your strawberries and put in a container or bowl, top with 1 tbsp of sugar. Let sit for 1 hour
  • Using a blender add 2 cups ice, 2 cups diced pineapple, 2 cups of sweetened strawberries, and 2 cups of pina colada mix
  • Blend until smooth.
  • Add the rums and blend for 20 seconds
  • Pour your cocktail mix into an 8oz glass filling it 3/4 of the way full
  • Garnish and serve.
  • Serves two 8oz glasses
