How to Make Albondigas in an Instant Pot

Marrying into a Mexican family, I have learned a lot about the culture as well as experience different types of food. There were several recipes that my mother-in-law makes that I totally would eat over and over again. One of my favorite things besides Mole and potato enchiladas is Albondigas. I have been begging my husband for years to get his mom’s recipe but he always forgets to write it down.
So when I was offered a chance to create a recipe using NC raised Beef products, I knew that this was the recipe I wanted to try and see if I could come close to recreating and I wanted to recreate using my new best friend, my Instant Pot. Before I get to the recipe, let me tell you a little bit about the beef that I used.
You may remember that I was part of another promotion for Got to be NC back in the fall when I created a chicken salad recipe using chicken from Queen B Farms. I found out when I was researching the farm that chicken was just a small part of their farm. Beef is their main money maker.

When I stopped by their booth at Cary’s Downtown Farmer’s Market, I immediately recognized their son, who has a say in all the decisions that are made on the farm. Because someday he will be the one running it. I love their philosophy that they want to be good stewards of the land. The son told me that on any given day he could be seen out in the pastures giving the cows hugs. Yep, they believe that animals should be given love and treated as humanely as possible. I also learned something that I never knew, that you have to find the right butcher when it comes to processing meat. What I mean by the right butcher- one that kills in a humane way. Did you know that a bad butcher could spoil a batch of meat? I didn’t but wow imagine that.

Queen B Farms is located in the small town of Mebane, North Carolina. It is a 100-year-old family farm. So know I know you are probably wondering about the recipe- well Albondigas is an amazing meatball soup- but not like any meatball you have ever had. I got a pound of ground beef from Queen B Farms at the market to make this tantalizing recipe.

How to Make Albondigas in an Instant Pot
Ingredients:
- 1 large onion, chopped
- 1 large garlic clove minced
- 3 quarts of beef stock
- 1 or 2 cups of water ( enough to cover the soup)
- 1/2 cup of tomato sauce
- 1 large potato diced
- 2 large carrots, peeled and sliced
- 1/3 cup of raw white rice
- 1 pound of ground beef
- 2 raw eggs
- 1 1/2 teaspoon of salt
- 1/4 teaspoon black pepper
- 1 zucchini cut up
- 1 teaspoon of dried oregano
- 1/2 cup of cilantro chopped
Directions:

- Pour in the Beef stock into the Instant Pot.

- Add the chopped garlic.

- Add the chopped carrots, potatoes, and zucchini.

- Add tomato sauce

- Add onions.

- In a separate bowl, place the ground beef and add salt and pepper.

- Add Oregano to the mixture

- Add in eggs and mix together.

- Add rice and mix into ground beef mixture.

- Form the ground beef mixtures into meatballs.

- Place the meatballs in the Instant Pot.

- Put the top on the Instant Pot and cook on the Soup setting ( about 30 minutes).

- The Finished Product

- Top with Cilantro and serve with warm tortillas.
