Have I mentioned lately how much I love my other job working at Odom Farming Company? Although I have only been there for a little over a year, I feel like I have been there longer. There is nothing I love more than supporting local farmers because when we support local farmers we are supporting local economies.

Although I love the Spring Strawberry Season and the Fall Pumpkin season, my favorite season actually takes place in the hottest days of summer and that is CSA ( Community Supported Agriculture) Season. Every Tuesday morning, I would get up early and meet Emily to pack the boxes for the program. The reasons why I loved it so much is that one I get to see Emily, she has fast become one of my closest friends, and two is because I love to see what each box would contain every week.

During the season, I don’t there are two boxes that were alike. I love to taste fresh fruit and vegetables. There is nothing better to me than some zucchini, squash, new potatoes, and corn on the cob fresh from the garden. Also during the season, I love to experiment with new recipes and I wanted to share this Instant Pot Apple Pepper Jelly on with you. 

Apple Pepper Jelly Recipe for the Instant Pot

Serves: 6
The recipe should make 6 – 8 oz. canning jars that can be stored up to one year.
 

Ingredients

  • 1 whole Red Bell Pepper, seeded and finely chopped
  • 1 whole Green Bell Pepper, seeded and finely chopped
  • 5 whole Jalapeno Peppers, seeded and chopped
  • 2 cups Apple Cider Vinegar
  • 4 cups Granulated Sugar
  • 1 package Certo Fruit Pectin

Directions:

Mix the red pepper, green pepper, and jalapeños with sugar in the instant pot.
Let them sit for 30 minutes.

Add the Apple cider vinegar.
Close instant pot and press pressure valve to the sealed position.
Set on manual for 1 minute.
Release pressure naturally for at 15 minutes.
Carefully release the pressure valve and remove the top.
Using a hand blender or a potato masher, blend/mash mixture until desired consistency.
Turn Instant Pot to ‘saute’ function and allow the pepper jam to come to a simmer/boil.
Add your pectin.
Stir to combine.
Simmer for 2-3 minutes or until slightly thickened.
Turn pot off.
Allow mixture to cool and then pour into jars.
