Catching Up with Friends over Amazing Chicken Salad

After working this summer at a local farm. I have a new found respect for farmers. And when I get to combine a trip to see my daughter for her 22nd birthday, a trip to the Piedmont Triad Farmer’s Market to interview and purchase items there and to create a recipe for an amazing chicken salad that I can share with a friend I hardly ever get to see. Then that is a win-win for me.

And that is what the last three days have held for me. Saturday my oldest daughter turned 22. And we set out to Greensboro to help her celebrate her birthday. I love it when I can use work as an excuse to see my girls. Because of my involvement with the Got To Be NC program, I was able to go to the Piedmont Triad Farmer’s Market which is like 15 minutes from where my daughter lives to interview the owners of Queen B Farms.

I will have to say that I could have talked to them for hours. It was so interesting to learn how they made their animals feel loved and that they search for humane butchers when it comes time. I honestly could write a blog post just about the farm itself and I am thinking that will be a followup to this one so look for it in a few days. But I will say that I was totally impressed with how old the farm was- 100 years and that they give their son, who is 15 an active part in the decision-making on the farm. How cool is that? Plus I never knew that you could get meats from a farmer’s market and I will say that this chicken was the best I had ever tasted. I think that is because it had no additives in it.

I was really excited to get home and start making the recipe. I think it was because I had an amazing idea in my head on how I wanted to present it as well as it gave me a chance to catch up with Laura.

So Sunday night, after a trip to the store I came up with this recipe for an amazing chicken salad that was just right for an afternoon lunch serving tea.  I mean how perfect could that be. Before I share my recipe I wanted to share with you the other amazing recipes that are included in this promotion.

Got To Be NC Chicken at Your Local NC Farmer’s Market

So now I am going to share my Amazing Chicken Salad Recipe with you.

Chicken Salad on plate

Ingredients:

  • 2 tablespoons of mayo
  • 1 small container of plain Greek yogurt
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 bag of dried cranberries and candied pecans ( you can find these on the aisle with the salad dressings)
  • 1/2 of diced apple
  • 1 farm fresh chicken breast
  • baby spinach leaves ( optional)
  • Croissants

Directions

  • Boil your chicken.

  • Let cool and then tear into pieces. I made mine a little longer but your pieces will depend on how chunky you want your salad to turn out.
  • Place chicken in a medium-sized bowl.

Mayo and Greek Yogurt for Chicken Salad

  • Add Yogurt.
  • Put the mayo in the bowl.

Pecans and cranberries Chicken Sala

  • Place the cranberries and candied pecans in the bowl.

Apples for Chicken Salad

  • Put the apples in the bowl.

Mixing Ingredients for Chicken Salad

  • Mix it all together.

  • When ready to serve cut the croissants open. Place spinach leaves on the bottom half of croissant. Then spread the chicken salad on top.
  • Lastly, serve with your favorite beverage. This is perfect for a light afternoon lunch.
Amazing Farmer’s Market Chicken Salad
Ingredients

  14. I love chicken salad sandwiches! Your recipe looks delicious. Mine is basically just canned chicken and mayo, lol. I’ll try yours the next time. I wish we had more of a farmer’s market around here. We just have a small one that’s open for three hours on Saturdays during the summer. Although there is one a little further away that has special fall hours (they run a pumpkin patch). I don’t know if they sell poultry, but I’ll definitely check!

  25. For starters, that chicken salad looks delicious! Way before I was born, my parents were actually farmers. My dad grew up on a farm and his parents were farmers. When my mom married him she worked the farm with him. It is hard work and I know a lot of of his friends still work farms. I have a massive respect for anyone who does that job.

Yes, humane treatment is key at Queen B farms. When I was talking to the owners they said that a bad butcher could ruin their whole batch of beef. They even look for humane butchers.

  51. This is almost exactly like what I call my ‘Waldorf Chicken Salad’ that I always make with leftover roast chicken. Just sub raisins for the cranberries and add a bit of chopped apple and maybe some wholegrain mustard instead of some of the vinegar for some zing.

    I too am paranoid about having too-dry chicken. I’ve taken a hint from Ina and started roasting bone-in, skin-on chicken breasts (or whatever parts you like) for salads if I’m not using leftovers.
