Easy Irish Beef Stew
Top O’ the Morning to you. Today is a day that we are all Irish even if we aren’t. I have a delicious and easy Irish Beef Stew recipe to share with you. Don’t worry about slaving away on this yummy dinner I will share with you a few shortcuts that will have it look like you spent all day in the kitchen preparing this delicious feast when in fact you put it in a crockpot and walked away. 🙂
Ready to get started first you need a crockpot. During this time of year, I use mine all the time. In fact, I have several so I can use them every night.
Ingredients
- 3 pounds of stewed beef
- 3 cups of Frozen country style hash browns ( Shortcut here- no need to peel potatoes)
- 2 cups of frozen mixed vegetables
- 2 cups of beef broth
- 1 package of McCormick® Brown gravy mix
- 1 tsp salt
- 1/2 tsp ground black pepper
Directions:
- In a slow cooker combine the stewed beef, hash browns, and mixed vegetables
- In a medium bowl, whisk together broth, gravy mix, salt and pepper. (Remember if you don’t have a whisk you can use a beater from your mixer.)
- Add to the stewed beef mixture.
- Cover and cook on low for 8 hours or until beef is tender.
This recipe is a great recipe for those nights when you are so busy with soccer games that you don’t have time to fix dinner. Just take 10 minutes in the morning to mix it all together and throw it in the crockpot and by the end of the day and after the soccer game, dinner is served.
