Semi Homemade Chicken Pot Pie with a Twist
One of the things I love about hosting the Home Matters Linky Party is that I get to find new recipes and add my own touches to them. Simply put I find a shortcut to make the recipe semi-homemade. A few weeks ago there was a recipe for a healthy chicken pot pie that I made. I was able to substitute using items I had on hand to make two yummy chicken pot pies that I was able to share with my mom and my sister. My mom said it was so yummy that anytime I wanted to share again, she would be happy to accept.
This was my first attempt at making a pot pie and I will have to say that it will not be my last. Here are the things you need for a pot pie.
- Pie Crusts( I used the deep dish store bought kind)
- 3 tablespoons of margarine or butter
- 6 chicken breast strips cut up in small pieces and cooked.
- 1 can of green beans
- 1 can of carrots
- 1 can of corn
- 1/2 cup of White Wine. I used Duplin’s Winery Carlos.
- 1 can of chicken broth
- And a few handfuls of flour.
- Waffle Fries
You heat your oven to 350 degrees. During the time your oven is preheating, cook your chicken. While your chicken is cooking, drain your cans of corn, green beans, and carrots. Once your chicken is done add all the ingredients but the flour together. Yep, that’s right throw the green beans, carrots, corn, chicken broth, and white wine into the mixture. Then add a few handfuls of flour ( enough to make your mixture thicken up.) Bring to a boil. Then separate out the chicken mixture between the two pie crusts. Then top it with waffle fries. Yep, I said waffle fries. That is the twist. Put in the oven for 20 minutes are until fries are cooked and then enjoy this yummy chicken pot pie dish.
