Quick and Easy Dinner: Omelets in a Muffin Pan
The other day when I was facing that question that most moms and dads dread you know the one I am talking about , when your kids come to you and ask or demand “What’s for Dinner?”. Trying to please everyone when it comes to meal time is not an easy feat. But this unique and yummy omelet recipe is not only easy to prepare but add some fruit and some hash browns as side and you have a delicious dinner that everyone will love. Plus you can also change it up a little and change the ingredients that you use to make your own omelets. For mine I used turkey lunchmeat, tomatoes, green peppers, cheese and some bacon that we had leftover from another meal. For the veggie lover (Aka Gracie in our family) I left out the meat. I made these the other day and invited my mom and sister over for dinner and they were a hit. Do you want to be a hit, then check out the yummy recipe below and let me know if you have tried it. And if you don’t have a muffin pan I just purchased another one on Amazon this week for $6.29. I decided I want to cook 2 dozen muffins at one time so now I have an extra you can never have to many muffin pans especially if you are going to use it to help make dinner time exciting. Have you consider making dinner in a muffin pan?
Omelets in A Muffin Pan
Ingredients
- 1 dozen eggs
- 1 cup milk
- 1 green pepper
- 1 tomato
- 2 cups cheese
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 350.
- Spray muffin tin with non stick cooking spray.
- Mix together the dozen eggs and milk.
- Add salt and pepper to the egg and milk mixture. Set aside.
- Chop vegetables and meat that you are using as filling. I used what I had on had but you can use anything your heart desires.
- Fill muffin tin first with the chopped meat, vegetables and cheese. If you have a non meat eater in your family make sure to make a few with just the vegetables and cheese.
- Pour the egg and milk mixture over the meat, veggies and cheese filling it about 3/4ths of the way.
- Take a spoon and gently mix all ingredients in the muffin tins.
- Place in the oven and cook 15-25 minutes or until eggs are cooked throught. The amount of time for cooking can vary depending on what you use as your mixins.
- Once done add some potatoes, (we did hash browns) and some fruit and you have a quick and easy dinner that everyone in your family will enjoy.
