Potato Enchiladas Time

My family love enchiladas. Who am I kidding they love all Mexican food. It all comes from being part Mexican ( the girls) and full Mexican (Raul). But we don’t always agree on what meat to eat but when I make these potato enchiladas they all want to eat these and ask for more. Plus they are quick and easy to make. This is great for vegans as well. Since Gracie has decided that she wants to be a vegetArian I am trying to support her in her decision. I try to make at least two meals a week without meat. The days that we do have meat in our meals I make sure to load up on sides that I know she will eat. Pastas, ramen noodles, vegetables and bean quesdillas or tacos are great alternatives as well. But this is one dish that the entire family will eat.

Potato Enchiladas Time

This enchiladas are quick and easy to make. They are a crowd pleaser in my family.
Servings 4 people

Ingredients
  

  • 5 potatoes
  • 1 can enchilada sauce
  • 1 package tortillas
  • salt to taste
  • pepper to taste
  • shredded lettuce
  • diced tomatoes
  • shredded cheese
  • sour cream
  • avocado

Instructions
 

  • Boil your potatoes.
  • After the potatoes are boiled, peel them and mashed them.
  • Add salt and pepper to season. You can also throw in some spices as well.
  • Preheat the oven to 350.
  • Wrap tortillas (corn or flour) in a paper towel and microwave for 20 seconds to make them soft.
  • Place a spoonful of mashed potatoes in the middle of the softened tortilla and roll up.
  • Place in a greased pan.
  • Continue until all your potato mixture is gone or you run out of tortillas.
  • Pour enchilada sauce over the stuffed tortillas.
  • Place in oven and cook for 20 minutes at 350.
  • Sprinkle with cheese and cook another 5-10 minutes.
  • Served topped with lettuce, tomato, sour cream and avocado.
