Boil your potatoes.
After the potatoes are boiled, peel them and mashed them.
Add salt and pepper to season. You can also throw in some spices as well.
Preheat the oven to 350.
Wrap tortillas (corn or flour) in a paper towel and microwave for 20 seconds to make them soft.
Place a spoonful of mashed potatoes in the middle of the softened tortilla and roll up.
Place in a greased pan.
Continue until all your potato mixture is gone or you run out of tortillas.
Pour enchilada sauce over the stuffed tortillas.
Place in oven and cook for 20 minutes at 350.
Sprinkle with cheese and cook another 5-10 minutes.
Served topped with lettuce, tomato, sour cream and avocado.
