Like Taco Salad, Then You’ll Love This Flavor Excursion
Last August I had to have major surgery. I had rotator cuff and Biceps tenodesis, it put me out of commission for a while. Being one-armed is not fun. I never really realized how much I depend on both of my arms. Even simple things like putting my hair in a ponytail or shaving under my arms were things I needed to get help with. And when it came to cooking, yea I will admit that I also had help with that as well. Whether it was a husband cooking dinner or friends bringing dinner so that he didn’t have to cook, we were truly blessed. One of my friends made this yummy taco salad that we have had several times since then. But the other day while looking in the Hispanic food aisle at Publix, I saw this dinner kit from Old El Paso with the soft sit and stand tacos and thought why don’t I make taco salad and uses these taco shells as a serving dish. Besides Old El Paso is our go to when it comes to quick and easy Mexican meals. You won’t believe what you use to make this taco salad and how yummy it turns out.
I don’t have the chicken pictured as it was already in the frying pan cooking when this picture was taken. But here all the ingredients listed.
- Chicken breasts or tenders
- Old El Paso Taco seasoning
- Head of lettuce or lettuce shreds
- 1 bottle of Kraft Italian Dressing
- 1 bag of crushed nacho cheese tortilla chips
- 1 bag of Kraft Shredded Cheese ( I use the Mexican blend)
- Old El Paso Stand and Stuff Dinner kit
- Avocado from Mexico
Cut the chicken breasts or tenders into chunks and cook in frying pan. Add the taco seasoning from the Old El Paso Stand and Stuff Dinner kit to the chicken when it almost done. Follow the directions on the seasoning packet for cooking directions. Take your bag of nacho cheese tortilla chips and crush them into pieces. In a large bowl combine your lettuce, shredded cheese, tortilla chips and chicken. Mixing well. Then pour the whole bottle of Kraft Italian Dressing into the bowl and mix well. Take the stand and stuff tortilla shells and heat them up in the microwave per the directions on the package.
Take the stand and stuff tortilla and fill them with this yummy taco salad. Add avocado as a garnish and serve with a side of refried beans. Not only is this an easy dinner recipe but it is one that I can guarantee that your whole family will enjoy.
