Bacon Wrapped Pineapple Bites

Have I ever told you that my favorite fruit is the pineapple? I think my first memories of seeing a pineapple was when my mom would cook dinner on Easter Sunday. The usual dinner would be a glazed ham with pineapple straight from her oven. Forget the ham, Â I would go straight for the pineapple before anyone else could get it. Â I love pineapple on anything. And I do mean anything? LOL! I wanted to share with you today one of my favorite pineapple recipes.

Bacon Wrapped Pineapple Bites
Ingredients:

- 1 TBS Barbecue Sauce
- 1 TBS Grape Jelly
- 1 whole pineapple, cut into 1-inch chunks
- 1 package of bacon, uncooked, cut in half
- 1 package of toothpicks (optional)
Sauce Recipe
- Mix barbecue sauce and jelly together.
Directions
- Preheat oven to 350 degrees.
- Spray pan.

- Place slice of bacon onto a pan.

- Put one pineapple chunk on the end of the slice of bacon.

- Roll bacon over pineapple. (Optional, secure with toothpick.)

- Repeat until pan is full.

- Place a spoonful of sauce over each bacon roll.

- Cook in the oven for 40-45 minutes, until bacon is fully cooked.
