Bacon wrapped sweet and sour pineapple bites

Have I ever told you that my favorite fruit is the pineapple? I think my first memories of seeing a pineapple was when my mom would cook dinner on Easter Sunday. The usual dinner would be a glazed ham with pineapple straight from her oven. Forget the ham,  I would go straight for the pineapple before anyone else could get it.  I love pineapple on anything. And I do mean anything? LOL! I wanted to share with you today one of my favorite pineapple recipes.

Bacon Wrapped Pineapple Bites

Ingredients:

Ingredients Pineapple Bite

  • 1 TBS Barbecue Sauce
  • 1 TBS Grape Jelly
  • 1 whole pineapple, cut into 1-inch chunks
  • 1 package of bacon, uncooked, cut in half
  • 1 package of toothpicks (optional)

Sauce Recipe

  • Mix barbecue sauce and jelly together.

Directions

  • Preheat oven to 350 degrees.
  • Spray pan.

  • Place slice of bacon onto a pan.

  • Put one pineapple chunk on the end of the slice of bacon.

  • Roll bacon over pineapple. (Optional, secure with toothpick.)

  • Repeat until pan is full.

  • Place a spoonful of sauce over each bacon roll.

  • Cook in the oven for 40-45 minutes, until bacon is fully cooked.
