Today is National Potato Day

Did you know that: Americans eat more potatoes than any other kind of vegetable — on average, we each down 1/3 of a pound every day!
Here are some potato recipes for you.

Baked Potato Casserole

Ingredients:

 

  • 8 Medium potatoes peeled and cut into 1 inch chunks
  • 1 cup evaporated milk
  • 1/2 cup light sour cream or regular sour cream
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 cups shredded cheddar cheese divided
  • 6 Slices crispy crumbled bacon
  • 3 Sliced green onions

 

Steps:
1.Place the potato chunks in a large pot. Fill with enough water to cover the potatoes. Bring to a boil.
2.Cook over medium-high heat for 15 to 20 minutes or until tender. Drain.
3.Add evaporated milk, sour cream, salt and pepper. Beat with a hand held mixer until smooth.
4.Stir in 1 ½ cups of cheddar cheese and half of the bacon.
5.Preheat the oven to 350 degrees F. and grease a 2 1/2-3 quart casserole dish.
6.Spoon the potato mixture into prepared casserole dish. Bake for 20 to 25 minutes or until heated through.
7.Top with remaining 1/2 cup of cheddar cheese, remaining bacon, and green onions. Bake for an additional 3 minutes or until the cheese has melted.

Campfire Potatoes

Ingredients:
Potatoes – thinly sliced
Carrots – thinly sliced
Onions – diced
Margarine or butter
Salt
Pepper

Optional:
Grated Cheese
Spicy Pepper Medley
– Or –
Fresh or dried dill
Different vegetables

Directions:

Prepare enough potatoes, carrots & onions for the crowd you’re feeding. Spray tin foil with Pam. Place vegetables on tin foil. Put a few dabs of butter or margarine on top. Season. Double wrap in tin foil.

Can be placed on a grill over hot coals in the fire or on a barbeque. Turn occasionally. Takes 1/2 – 3/4 hour to cook depending on the heat.

Dill is delicious with new potatoes. Leftovers can be fried for breakfast

Potato Salad

Ingredients
5 lbs. red potatoes (boiled)
12 eggs (boiled)
1 cup celery (chopped)
salt and pepper (to taste)
1 cup sugar
2 Tbsp. yellow mustard
1 1/2 cup Miracle Whip
1/2 cup milk

Directions

Cube potatoes and chop eggs.

In a large bowl, combine the potatoes, eggs and celery.

Set aside.

In a smaller bowl, mix the Miracle Whip, sugar, milk and mustard.

Stir until the dressing is desired thickness.

Pour the dressing over the ingredients in the large bowl; mix well.

Salt and pepper to taste.

Refrigerate before serving.
