To Die For Green Bean Casserole With Crunchy Onion Bites
I have always turned my nose up on trying new things to eat, especially when I was growing up. But as soon as I went away college. I started to miss home cooking. One day, one of my friends invited me to their apartment for Sunday dinner. They had some food that I wasn’t quite sure of what it was. They asked me if I wanted some green bean casserole. I though sure, I mean I am safe with green beans right. But boy was I surprised. What they put on my plate was unlike any green beans I have ever seen, let alone any casserole. But not wanting to offend them, I graciously took a nibble. And my mouth exploded ( well not literally) with the yumminess of this dish. I immediately asked for the recipe. I got it promptly forgot about it. Years later, college degree in hand and three kids and a husband way later, I decided to try it out on my family. Their reaction was the same as mine. So I decided to share the recipe that was shared with me many years ago.
Crunchy Onion Bites Ingredients

- 1/3 White Onion (thinly sliced & chopped)
- 2 Eggs
- ½ cup All-Purpose Flour
- 2 Tbsp Panko Bread Crumbs
- 2 tsp salt
- 1 pkg. (16 oz.) Frozen Green Beans (thaw beforehand)
- 8 oz. Crimini Mushrooms
- 1/3 White Onion (thinly sliced)
- 1 large Garlic Clove (chopped)
- 2 tbsp. All-Purpose Flour
- 1 cup Vegetable Broth
- 1 cup Half & Half
- 3 tbsp. Butter
- 1 tsp. Paprika
- ¼ tsp. Nutmeg
- Preheat oven at 475 degrees F.
- Crunchy Onion Bites: Combine onion, flour, panko bread crumbs, 1tsp salt, and eggs in small mixing bowl. Stir well. Spread onto the aluminum foil-covered baking sheet (spray with nonstick cooking spray). Bake for approximately 20 minutes (turn halfway through). Remove and set aside.
- Add butter to stovetop pan on medium heat. Sauté onion and mushrooms for approximately 10 minutes (or until onion is translucent). Add garlic at the 6-minute mark.
- Add green beans to stovetop pan. Sauté for another 8 minutes.
- Add flour, nutmeg, paprika, and salt to pan. Stir. Add vegetable broth. Stir.
- Turn heat to low and add half & half. Stir well. Continue to stir and heat on low for approximately 5 to 8 minutes.
- Pour mixture into casserole dish.
- Bake at 350 degrees F for 30 minutes.
- Smash the crunchy onion bites into small pieces. Add atop the green bean casserole dish at the 20-minute mark.
- Remove and serve!
