Ingredients

  • 1 (8-9 pound) bone-in Smithfield spiral ham
  • 3/4 cup water

Glaze Ingredients

  • 1/2 cup DARK brown sugar
  • 1/2 cup your favorite maple syrup
  • 1/4 cup ground cinnamon nutmeg
  • 1 small orange sliced thinly
  • 1 tablespoon whole clove (optional)

Directions

  • Preheat oven to 300 degrees F with rack 3/4 of the way down (on the second notch from the bottom in most cases).
  • Place ham (flat side down) and water in roasting pan. There should be room around the sides of the ham so that it isn’t touching the pan at all. If you have chosen to use whole cloves, press them into the ham in various areas spread out over the top evenly.
  • Place a few slices of orange on the top of the ham and pin down with toothpicks.
  • A few slices can also be added to the water in the bottom of the pan.
  • Cover tightly with aluminum foil and allow the ham to cook for approximately 1 hour and 30 minutes (until heated through and tender).
  • It should be soft and while the ham is heating whisk all glaze ingredients together in a saucepan over medium-low heat until smooth and simmering.
  • Allow to simmer for 2 minutes then take off the heat. The glaze will thicken as it sits and you may need to whisk once before adding to the ham.
  • As soon as the ham is heated through remove the aluminum foil and pour the glaze over the top. Using a brush will ensure that the top of the ham is completely covered including crevices.
  • Increase the oven temperature to 400 degrees F and return the ham to the oven uncovered.
  • Cook for 20 minutes until the glaze is bubbling and visibly caramelized. Cloves can be removed at this time if desired.
  • Allow ham to rest 10 minutes before slicing and removing to a serving plate or directly to dishes.
  • Once rested, the ham will have a candy-like outside with a moist and juicy interior.
  • Serve with additional mustard on the side or cheeses of your choice.
  • Roasted or mashed vegetables are a good compliment to the ham.
