Strawberry Season Is In Full Swing

The month of May brings lots of things. May flowers, the start of Spring weather and my favorite season Strawberry Season. I love everything about Strawberry season. Some of my fondest memories  of  my girls when they were small was taking them to the strawberry patch to go strawberry picking. I can remember the first time we took Mikaela, who is now 17, she got all upset because she got dirt on her hands. Yep I totally have a picture somewhere to remember that day. But with strawberry season comes strawberry overload. But I am able to get my strawberry fix because Mikaela now works at strawberry farm, Odom Farming. There is nothing better than strawberries in everything. Matter of fact I just cut up some strawberries and put them in a salad for lunch today.

I started thinking about other things that I can make with strawberries and came up with this version of  a strawberry dessert that has cool whip inside it. Sounds Yummy doesn’t it? Well it is.

Strawberry Granola Delight

This strawberry dessert is just what the doctor ordered.
Prep Time 10 minutes
Total Time 13 minutes
Servings 10 people

Ingredients
  

  • 1 bag Post Grape-Nuts Fit's Cranberry Vanilla Granola
  • 1/3 cup brown sugar
  • 1/2 cup flour
  • 2 egg whites
  • 1/2 cup sugar
  • 1 cup cool whip
  • 4 ounces cream cheese
  • 1 1/2 cups chopped strawberries
  • 6 tbsp melted butter

Instructions
 

  • In a large bowl add the granola, brown sugar, flour, and melted butter and mix together.
  • Spread into a 8 x8 pan covered with parchment paper.
  • Bake at 350 for 20 minutes. Let cool and cut in half.
  • In a large mixing bowl combine the egg whites and sugar and mix on high. Add the whipped cream aka cool whip and mix for 5 minutes.
  • Continue mixing and add the softened cream cheese. Mix on low.
  • Fold the fresh strawberries into the mixture.
  • In a buttered cake pan press half of the granola mixture on the bottom.
  • Top with the strawberry mixture and then add the remaining granola mixture.
  • Cover and freeze for three hours or more.
  • Enjoy this refreshing strawberry daydream delight.

  1. I haven’t had a bowl of Grape Nuts in a long time–I used to really like them! This dessert sounds very good and also healthy. Hum–start eating Grape Nuts again and attempt to make this desert–sounds good to me.
