As mentioned in the video, I invited a few close friends to the big reveal. Of course, I couldn’t have a big reveal with friends without creating a fabulous event to go around it. In setting up the party, I remembered that I had pinned some pictures about backyard parties using pallets as tables, and I knew that was what I wanted to recreate in my backyard. I wanted an intimate setting that was not only elegant but simple at the same time if that is possible.

So I had my husband bring some pallets up from the back of our property and set about decorating them. Decorating them was easy. I just simply bought two rolls of burlap with lace down the middle (which I will probably reuse for my oldest’s wedding next year) and placed them down the middle of the pallets. Then on top of those, I placed a string of white lights, some magazine trees that I learned how to make last year, some lanterns I borrowed from my friend Courtney and some Magnolia branches from the tree in our backyard. Seriously, folks, I went back there and just snapped some branches off it was that easy. So the decorating was done but what about the food.

I had an assortment of snacks along with hot chocolate and hot apple cider because after all even though it is North Carolina it was actually cold here. But the best part of the night beside the big reveal were my gluten-free mini coffee cakes that I made with Nellie’s Free Range Eggs. Why did I make them with free range eggs you ask? Because I since I started working at the farm and working on blog posts for the Department of Agriculture, I have come to realize the importance of having happy healthy animals producing the food I eat. And when we had our chickens, Bowie and Ming Ming, who were raised free range, we had the best-tasting eggs ever. And I love that Nellie’s eggs are Certified Humane, Free Range, and B Corp. So I knew I wanted to serve the best to my friends. 

I wanted to share this recipe with you.

Mini Coffee Cakes

Mini Coffee Cakes Perfect for A Blog Cabin Reveal from North Carolina Lifestyle Blogger Adventures of Frugal Mom

Ingredients:

For the Coffee Cake

  • 2 cups of gluten-free baking mix
  • 2/3 cup of milk
  • 1/3 cup brown sugar
  • 3 tablespoons of melted butter
  • 1 Nellie’s Free Range Egg

For the Toppings

  • 1 cup brown sugar
  • 1/2 cup of gluten-free baking mix
  • 4 tablespoons of softened butter

Directions:

  • Heat oven to 400º. Line a muffin tin with cupcake liners. 
  • In a bowl, mix together all of the coffee cake ingredients (baking mix, milk, brown sugar, melted butter, and egg)
  • In a second bowl mix together all the topping ingredients (brown sugar, baking mix, and softened butter) to form the crumble.
  • Spoon a scoop of coffee cake batter into the muffin tin, and top with one scoop of ingredient mixture.
  • Bake 18- 20 minutes 
  • Serve with your favorite warm beverage or scoop of Vanilla ice cream. 

It was that easy. I was able to whip these up in no time. This would be a perfect addition to any holiday party or even for breakfast on Christmas morning.
