The other day I told you about how I survived my first burn boot camp, and I promised that I would share the yummy meal that was prepared for us by Tastefully Served after working out. Well, today I am doing just that. But here is a little warning. Make sure you aren’t hungry when you read this post because if you are this post will make you even hungrier. 

So let’s begin. So after surviving burn boot camp, it was time to chow down. I was really looking forward to it. I mean seriously just look at the menu. 

We enjoyed almond joy energy bites, gazpacho, turkey-feta-sun dried tomato meatballs with tomato sauce, and lettuce wraps with spicy peanut sauce.

I mean seriously yum. My favorites were the Almond Joy Energy Bites and the Turkey Feta Sun-Dried Tomato Meatballs with tomato sauce. ( I asked for the recipe for this and if you keep reading you will see how Meredith from Tastefully Served shared the recipe and she is allowing me to share it with you. So let me just get you started on the menu. The Almond Joy Energy Bites were yummy. I so could get in trouble if I made these. They were so good. They were so good in fact that I know several participants who went back and got seconds, thirds and more. I found a recipe for them and pinned it here

The gazpacho was yummy but I only took a few sips of it. I could taste the cucumbers in it. Not that don’t like cucumbers, I do but they don’t like me. I knew if I kept eating it, I would burping cucumbers the rest of the night. So I gladly shared this with my friend Cindi.

The chicken salad with the spicy peanut sauce was amazing. But being a girl who doesn’t like spicy stuff ( go figure that out since I married a Mexican), I could feel my lips tingling. But you know what I still ate that chicken anyway. Why? Because I have never tasted anything like that ever. Who knew that peanut sauce could taste that good?

Next is my favorite- the meatballs. I seriously could eat them every day if I had too. I can’t wait to recreate this recipe for my family. I love that not only were they delicious but also a little sneaky. (Think of this as a great way to get your family to eat healthier without them even knowing it.) I have added the recipe, thanks to Meredith below. 

So now that I have told you about the food, let me tell you a little bit about the company Tastefully Served. It is a Raleigh-based company that provides delicious, seasonal and healthy meals, prepared by a professional chef and delivered right to your door at an affordable price.  (I hate that it is Raleigh based because I am like an hour away. ;()

Meredith Antunez is the owner of Tastefully Served and is a professional chef with more than 14 years of cooking experience. She graduated from the Culinary Institute of America and before that, UNC-Chapel Hill. She spent years developing her skills under multiple James Beard Award-winning chefs across the country until finally settling in her native North Carolina and eventually taking the helm at Vivace Charlotte when it opened in 2010.

I forgot to mention we also got a goody bag of yumminess to take home. Just look at how they had that displayed. And the stuffed peppers were the bomb. 

I want to thank Meredith for letting me share the recipe you see below with you guys. Hope you like it. 

Turkey Meatballs

Ingredients
  

  • 1 lb Ground Turkey
  • 1 Egg
  • 1 oz. Feta crumbled
  • 3/4 cup Old Fashioned Oats
  • 1 Tbsp. minced Sun-Dried Tomato
  • 1 cup Spinach sautéed
  • 1 tsp. Salt
  • Sauce:
  • 1 28 oz. Can Crushed Tomatoes
  • 1 28 oz. Can Whole Peeled Tomatoes
  • 2 Tbsp. fresh minced garlic
  • 2 Tbsp. Olive Oil
  • 1/2 cup Fresh Basil Leaves
  • Salt and pepper to taste

Instructions
 

  • To make meatballs:
  • Pulse oats in a food processor until finely ground.
  • Squeeze the moisture out of the spinach by twisting in a clean towel- then chop.
  • Combine turkey, egg, oats, feta, sun-dried tomato, spinach, and salt until all ingredients are evenly distributed.
  • Portion into 20 evenly sized balls, place on a greased sheet tray and cook in pre-heated 350* oven for 10-15 minutes, until internal temperature reaches 165*.
  • Meanwhile, in a heavy bottom sauce pot, sautée garlic in olive oil until fragrant but not brown, about 1 minute.
  • Add crushed tomatoes and whole peeled tomatoes (crushing the whole peeled tomatoes with your hands as they go into the pot) and simmer for at least one hour.
  • Add basil and season to taste.
  • Add meatballs and simmer for 5 minutes or so.
  • Serve over pasta or zucchini noodles.
