Celebrate Cinco De Mayo With This Chicken Dish

I received a credit from Zaycon to grab up some of this yummy chicken.

You would think that my husband being from Mexico we would celebrate Cinco de Mayo but to be honest it isn’t such a big holiday in Mexico as it is in the United States. They tend to celebrate more on September 16th which is their independence day. But in the spirit of the holiday I wanted to share with you a recipe that is so easy to make that you will want to make it for yourself.

Cinco de Mayo Chicken Casserole

This dish is easy to make and I love that that you can make your whole dish in one dish. (The amount of chicken breast that you will use depends on the size of the breast and how many people you will be feeding.)
Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes
Servings 5 people

Ingredients
  

  • 1 16 oz jar Pace Picante Sauce
  • 1/2 cup water
  • 1 can whole kernel corn
  • 3/4 cup uncooked long grain rice
  • 2-4 chicken breasts
  • Paprika
  • 1/2 cup cheese Use your favorite kind.

Instructions
 

  • Mix the picante sauce, water and rice together in a bowl.
  • Pour into a 9 x 13 baking dish.
  • Top the rice mixture with the chicken.
  • Sprinkle the chicken with Paprika.
  • Cover the baking dish with aluminium foil.
  • Bake at 375 for 45 minutes or until the chicken is cooked through and the rice is tender.
  • Sprinkle with cheese and put back into oven uncovered until cheese has melted.

If you noticed that I said that the amount of chicken breasts would depend on the size of the breasts and the amount of people that you are feeding. I used two breasts for my recipe but these breasts were huge. Over  a month ago I got some chicken from Zaycon Fresh foods and to say that I was impressed would so be an understatement. I got a 40 lb box of chicken and I still have a freezer full of chicken and I make chicken at least once a week if not more.

I know what you thinking online means you are paying a ton in shipping but if you consider gas shipping than it is very little. Here is the procedure to order. So you order online, then select a location near you to pick up your cases. Yep they deliver to a location near you . We got a 40 lb box of chicken and it  was so worth the time and the little extra expense to buy bulk because this chicken is not only fresh but the breast are humongous. Just look at the picture I posted when we got the box.

I have found that this box has not only sparked my creativity in cooking because let’s face it there is just so many times you can eat chicken a certain way. Now I am not saying that this will do the same thing for you as it did for me but you never know.
