Recipe: Chicken Salad With a Twist
Ingredients:
- 2 cans of chunk chicken
- 1 1/2 cups of low fat yogurt ( I used vanilla flavored)
- 1/2 cup of pecans
- 1 whole apple diced
Directions:
- Drain all the water from the chunk chicken, empty into a bowl and with a fork break it into small pieces.
- Chop the pecan into tiny pieces.
- Dice the apple.
- Add the yogurt, pecans, and apples to the chunk chicken and mix together.
- Serve on whole wheat toast, pita bread, or with crackers.
Substituting yogurt for mayonnaise makes this chicken salad heart healthy.
