Recipe: Chicken Salad With a Twist

  • 2 cans of chunk chicken
  • 1 1/2 cups of low fat yogurt ( I used vanilla flavored)
  • 1/2 cup of pecans
  • 1 whole apple diced


AFM salad


  • Drain all the water from the chunk chicken, empty into a bowl and with a fork break it into small pieces.
  • Chop the pecan into tiny pieces.
  • Dice the apple.
  • Add the yogurt, pecans, and apples to the chunk chicken and mix together.
  • Serve on whole wheat toast, pita bread, or with crackers.

Substituting yogurt for mayonnaise makes this chicken salad heart healthy.
