Celebrate National Pasta Month with #PastaFits

October is the month of witches and Goblins but did you also know that it was also National Pasta Month. Pasta is one of my go-to dishes when I either don’t feel like cooking ( and let’s face it most working moms are so tired when they come home, that is last thing on their mind) or when I forget to take something out of the freezer for the dinner. Plus it is good to forgo the meat every once in a while. And have you checked the prices of meat at the grocery store, pasta is a quick and frugal dish to make in a hurry. I was inspired when I was going through the Pasta Fits website when I saw this Chicken, Broccoli, & Cheddar Mac and Cheese Squares recipe. I tweaked it a little bit using the items I had on hand and  all I can say is that we had a yummy Friday night dinner that was quick and easy to make. Here is what you need to make Chicken, Broccoli & Cheddar Mac and Cheese.  First, of course, you need pasta. Any kind that you have on hand will do. Boil the pasta according to the directions on the package. I used the bigger noodles because that is what I had. For the broccoli part, you can either use fresh or frozen. I used frozen because I had that on hand. Make sure to cut it up in little pieces and sauté it.  Now for the chicken part, I cheated a little (what mom doesn’t) and used a shortcut. I used  chicken breast from a can. Don’t judge you know we take shortcuts to make our lives easier. Once the pasta is done, drain the water out but do not rinse with cold water. Throw the pasta, broccoli and chicken in a dish and then sprinkle cheese on top. I used cheddar and mozzarella. My family is in love with mozzarella cheese we put it on everything. Mix all of it together and enjoy.

So remember these are  the ingredients that you need to make this delicious meal.

See meals don’t have to be elaborate and contain tons of ingredients to be healthy, nutritious and delicious. You just have to think outside the box and use what you have on hand to make a frugal yet healthy meal that your whole family will love.

  1. I tend to eat pasta a lot! I do try to remember to throw in some tuna or chicken. For some reason I never think to throw in some veggies as well-and I love veggies! I’ll bet the shredded Mexican cheese would go great on the above dish as well.

  2. Pasta is one of my biggest weaknesses, I’m shocked I didn’t realize it was national pasta month lol

  3. Didn’t realize that pasta had its own ‘month’. We just had it for dinner last night so I guess we’re on board!
