I have so many fond memories of crowding around the table with all my sisters for a breakfast for dinner night when I was growing up. One of my favorite things to eat was French Toast and Bacon. My mom and dad always teamed up for this particular dish. Dad cooked the bacon while mom made french toast. And of course, if we had just recently taken a trip to visit in Massachusetts we would have fresh maple syrup from Vermont.

I often have thought about those times when I was little, I miss them so much, especially since my dad and one of my sisters is no longer with us. But that doesn’t mean that I can’t recreate those memories with my own girls but with a twist. So here is a twist on that good old fashioned French Toast from when I grew up.

Ingredients

For the French toast:

  • 1/4 cup unsalted butter, melted
  • 8 large eggs
  • 2 cups milk
  • 1/2 cup half and half cream
  • 1/3 cup brown sugar
  • 1 Tbsp. vanilla
  • 1 1/2 Tsp. cinnamon
  • 4 cups chopped apples (3-4 medium apples)
  • 2 loaf French bread, cut into cubes

For the topping:

  • 1/2 cup brown sugar, lightly packed
  • 1/2 teaspoon cinnamon
  • 3/4 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup cold, unsalted butter

Directions

  • Spread melted butter over the bottom of a 9×13 inch casserole dish
  • In a medium bowl, add the eggs, milk, half and half cream, brown sugar, vanilla, and cinnamon.
  • Stir until well combined
    Set aside.
  • In a saute pan, add your apples and cook on medium until softened
  • Put 1/3 of the apples in the prepared 9×13 dish.
  • Cover these with half of the cubed bread.
  • Add another 1/3 of the apples, and the rest of the bread.
  • Place the remaining apples in a Ziploc bag and save till right before baking
  • Pour the egg mixture over top of the bread.
  • Cover the casserole and refrigerate overnight
  • The next morning create the Topping.

  • In a small bowl, mix together the brown sugar, cinnamon, rolled oats and flour until combined.
  • Cut in the butter with a pastry cutter or two knives until the mixture resembles coarse crumbs.
  • Preheat the oven to 350 degrees F.

Apple French Toast Casserole Ready for Oven

  • Uncover the casserole and sprinkle the topping evenly over the casserole.
  • Now sprinkle the remaining apples on top of the crumble
  • Bake for 45-60 minutes.
  • Serve warm with maple syrup.
