Sheet Pan Nachos

The Easiest Way to Feed a Crowd? Sheet Pan Nacho Night!

Ingredients
  

  • 1 10 oz. bag tortilla chips
  • 1 14-oz. can black or pinto beans, rinsed and drained
  • 1 c. cheddar cheese, shredded
  • 1  c. salsa, homemade if you prefer
  • 3/4 c. sour cream
  • 1/2 c. frozen corn, defrosted
  • 1/2 c. black olives, sliced
  • 3 scallions, thinly sliced
  • 1/2 c. fresh parsley, roughly chopped
  • Sea salt and black pepper, to taste

Instructions
 

  • Preheat the oven to 375° F. Line a rimmed baking sheet with a piece of parchment paper. 
  • Place the tortilla chips on the prepared baking sheet and evenly top with beans and cheese. 
  • Lightly season with salt and pepper. 
  • Bake until the cheese melts and is bubbly, about 10-15 minutes. 
  • Remove the nachos from the oven and top with salsa, sour cream, corn, olives, scallions, and parsley. 
  • Serve family-style and enjoy!
