Preheat oven to 350.
Spray muffin tin with non stick cooking spray.
Mix together the dozen eggs and milk.
Add salt and pepper to the egg and milk mixture. Set aside.
Chop vegetables and meat that you are using as filling. I used what I had on had but you can use anything your heart desires.
Fill muffin tin first with the chopped meat, vegetables and cheese. If you have a non meat eater in your family make sure to make a few with just the vegetables and cheese.
Pour the egg and milk mixture over the meat, veggies and cheese filling it about 3/4ths of the way.
Take a spoon and gently mix all ingredients in the muffin tins.
Place in the oven and cook 15-25 minutes or until eggs are cooked throught. The amount of time for cooking can vary depending on what you use as your mixins.
Once done add some potatoes, (we did hash browns) and some fruit and you have a quick and easy dinner that everyone in your family will enjoy.
