Omelets in A Muffin Pan

Ingredients
  

  • 1 dozen eggs
  • 1 cup milk
  • 1 green pepper
  • 1 tomato
  • 2 cups cheese
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat oven to 350.
  • Spray muffin tin with non stick cooking spray.
  • Mix together the dozen eggs and milk.
  • Add salt and pepper to the egg and milk mixture. Set aside.
  • Chop vegetables and meat that you are using as filling. I used what I had on had but you can use anything your heart desires.
  • Fill muffin tin first with the chopped meat, vegetables and cheese. If you have a non meat eater in your family make sure to make a few with just the vegetables and cheese.
  • Pour the egg and milk mixture over the meat, veggies and cheese filling it about 3/4ths of the way.
  • Take a spoon and gently mix all ingredients in the muffin tins.
  • Place in the oven and cook 15-25 minutes or until eggs are cooked throught. The amount of time for cooking can vary depending on what you use as your mixins.
  • Once done add some potatoes, (we did hash browns) and some fruit and you have a quick and easy dinner that everyone in your family will enjoy.
