Green Eggs and Ham Quiche

Dr. Seuss’s birthday is tomorrow. Why not celebrate it with this yummy Green Eggs and Ham Quiche? Plus this is a sneaky way to get your kids to eat their veggies.
Here is what you need to make this yummy meal. There are tons of shortcuts in this meal that makes it one of my favorite kinds – semi-homemade.
Ingredients:
- 1 Deep dish frozen pie crust
- olive oil
- 2 cups of fresh broccoli chopped
- 1 cup of diced ham
- 1 cup of shredded Cheddar cheese
- 4 eggs ( I used Organic Eggs from the Happy Egg Co) The Happy Egg Co., produces delicious, brown-shelled, eggs that are always from true free-range hens that roam outdoors on 8 acres of land, the equivalent of 6 football fields every day- now that’s something to be happy about!
- 1 cup milk
- salt and pepper to taste
Now that you have all the ingredients here is what you need to do to put together this yummy dish.
Directions:
- Preheat oven to 350º
- Chop the broccoli into pieces. You can use a chopper like this one to make your life easier.
- Pour a sprinkling of olive oil in a large saucepan over medium heat.
- Add the broccoli and cook until tender.
- Stir in the ham and pour mixture into the frozen pie crust.
- Top with the Cheddar cheese.
- In a medium bowl, whisk together eggs, milk, salt, and pepper. (Frugal Tip– If you don’t have a whisk, you can use one of the beaters from your mixer.)
- Pour over the fillings in the pie crust.
- Place the pie crust with all the fillings on a cookie sheet and bake for around 45 minutes or until center is set.
- Cool about 30 minutes before slicing up to eat.
- Enjoy.
