How I Made Zucchini Lasagna From Scratch

I received some yummy tomato products to spark my creativity in the kitchen. The fact that I love them is all my own.

I am not a make it from scratch kind of girl. I am a give me a box and if it is quick and easy to make than that is for me. But ever once in a while I like to think outside of  the box and that is what I did when I made this Zucchini Lasagna. Remember Gracie, (who I might add will be having a birthday this week and will be turning 13 ) has decided that she  wants to eat as little meat as possible. She is very selective about what she does eat. Although she wasn’t a fan of the zucchini she still asked for seconds on this meal. But I will warn you that this meal takes a lot of pots and pans for preparation and well as cook time but it is so yummy afterwards. So if you are ready to take on the challenge with this dish than I am ready to share the recipe with you.

Zucchini Lasagna

This recipe requires a lot of prep time so it is not quick and easy but it is so yummy.
Prep Time 30 minutes
Cook Time 55 minutes
Total Time 1 hour 25 minutes
Servings 5 people

Ingredients
  

  • several Zucchinis
  • 1 tbsp olive oil
  • 28 oz can of Tuttorosso Crushed tomatoes
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Seasoning
  • 1 tsp Oregano
  • salt and pepper to taste
  • 15 oz Ricotta Cheese
  • 1/2 cup Parmesan cheese
  • 1 large egg
  • 16 oz mozzarella cheese

Instructions
 

  • Thinly slice the Zucchini length wise.
  • Place a little bit of salt on each and lay on top of paper towels. Continue doing with all the zucchini slices layering paper towels over each layer. Allow the zucchini slices to set for 10 minutes. (For me this was the hardest part as I couldn't get my kitchen tool to work so I ended up using a vegetable peeler for it.Hey you improvise in the kitchen right?)
  • Add the olive oil to a grill pan and grill the zucchini slices for about a minute on each side.
  • Preheat oven to 375.
  • In a medium sauce pan combine the can of Tuttorosso Crushed Tomatoes, garlic seasoning, Italian seasoning, and oregano.
  • Bring the sauce to a simmer and salt and pepper to taste.
  • In a large bowl combine the ricotta cheese, egg and parmesan cheese. Mix together and then set aside.
  • Using a 9 x 13 casserole dish spread the sauce on the bottom.
  • Then place a layer of the zucchini slices.
  • Then a layer of the cheese mixture.
  • Then another layer of zucchini slices.
  • Then another layer of sauce. Continue these layers until all is gone.
  • Bake covered for 45 minutes.
  • Remove the foil add some mozzerella and bake for another 10 minutes.
  • Lastly eat up.

I love having Tuttorosso tomato products on hand when the need to cook from scratch comes upon me. Being able to open this can and then mix in my own seasonings made it so much easier than if I would have had to crush the tomatoes by hand. Talk about a big mess. Plus I am challenging myself to come up with different recipes to try that are not to meat based and I think this one was the perfect answer to that question. Now I have a wonderful can of diced tomatoes that I am waiting to make salsa with. Anybody up for chips and salsa and maybe nachos without the meat?
