Now that Easter is over, I know a lot of you have leftover peeps. Lucky for you I have a really cool recipe for you. This would be perfect for any outdoor party. So I hope you enjoy these orange creamsicle Peeps Smores. I have included the recipe for sugar cookies, but if you are pushed for time, you can always use store bought cookies. No buddy can tell unless you don’t hide the package. 😉

WHAT YOU NEED TO BUILD AN ORANGE CREAMSICLE PEEPS SMORES

Creamsicle Peeps Smores
2 sugar cookies- store bought or see recipe below
White chocolate bar (I used Lindt)
3 pack Orange Creme Peeps
1/4 cup Wilton white chocolate melts
1/4 cup Wilton orange chocolate melts
Wilton pastel confetti sprinkles

HOW TO ASSEMBLE AN ORANGE CREAMSICLE PEEPS SMORES

1.   Place one of the sugar cookies on a microwave safe plate and place a white chocolate square on top. Microwave for 20 seconds to soften chocolate.
2.   Place 2 orange creme Peeps on top of the softened chocolate and microwave for 15 seconds.
3.   Place the other sugar cookie on top of the softened Peeps and gently press down allowing the marshmallow to expand.
4.   In a microwave safe bowl, melt the white chocolate melts for 40 seconds. Stir until completely melted.
5.  Using a spoon, drizzle the white chocolate on top of the Peeps smores.
6.  Repeat steps 4 and 5 with the orange chocolate melts.
7.   Sprinkle pastel confetti sprinkles on top and place an additional orange creme Peep on top.
8.   YUM!!

INGREDIENTS FOR SUGAR COOKIES

3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
3 sticks butter (1 1/2cups)-softened
1 1/2 cups granulated sugar
2 eggs
1 Tablespoon vanilla

DIRECTIONS

1.  Preheat oven to 350 degrees.
2.  Line a cookie sheet with parchment paper. Set aside.
3.   In a medium mixing bowl, add the flour, baking powder and salt. Set aside.
4.   In a large mixing bowl, add the softened butter and sugar.
5.   Using an electric mixer on medium speed, cream the butter and sugar for 2-3 minutes or until the mixture is light and fluffy.
6.   Adjust the mixer speed to low and add the eggs and vanilla. Mix until well incorporated.
7.   Add the dry ingredients and mix on low speed for 45 seconds, scraping the bowl if necessary.
8.   Add the remaining 1/4 cup sugar into a small bowl.
9.   Using a spoon or cookie scoop, scoop the dough into balls and roll into the bowl with sugar.
10.  Place the sugar-coated dough balls onto the cookie sheet, at least 2 inches apart to leave room for expansion.
11.   Using a drinking glass, press down on each cookie to flatten – about 1/4 inch thick.
12.   Bake at 350 degrees for 9-12 minutes or until golden brown (oven temps vary). 10 minutes usually works perfectly for me.
13.   Cool on cookie sheet for 5 minutes before transferring to a wire rack to completely cool.
14.   ENJOY!!
