Just like every football fan in the nation, I anxiously awaited the start of what is considered Super Bowl Season. Seeing what teams get playoff berths and which teams advance is really exciting. Of course, it is made even more exciting when the team from your home state not only has the best record but that they advance to the next round of playoffs. My home state team is the Carolina Panthers. The Panthers have pounded this whole season to a 15-1 record. They held the longest winning streak this season going 14 games undefeated.

I remember when the Carolina Panthers first started in Charlotte. My dad who was a big football fan took pride in taking the grandsons to games. When I think of the Panthers, I smile because I think of my dad. But also, when you think of the Panthers you think of North Carolina, my home state. And when you think of North Carolina, you think BBQ and banana pudding. These two dishes have a long and storied history in the kitchens of North Carolina.

So when I was thinking of some dips to make for a football watching party, I thought why not those two. Of course, Barbecue wouldn’t make a great dip but Barbecue Chicken would. So here is my recipe for BBQ Chicken Dip. Don’t worry tomorrow I will share my recipe for the Banana Pudding Dip I made as well.

Here are the ingredients that you will need.

  • 16 ounces of softened cream cheese
  • 1/4 Tsp of garlic salt
  • 1 1/2 cups of rotisserie chicken ( Here is  hint buy a whole chicken and use the rest to make chicken tacos for dinner)
  • 3/4 cups Barbecue Sauce
  • 1 cup shredded Cheddar Cheese
  • 1/4 cup of mayo ( or light mayo)
  • 1/4 cup of chopped Cilantro

Now here is what you need to do with all those ingredients.

  • Preheat oven to 350

  • Chop up the chicken and the cilantro. Some people choose to do it by hand but I used my Zyliss Easy Pull Food Processor.I loved that I could put pieces of chicken in it and it would come out finely chopped.

Plus the fact that I had to pull the lever on top with my arm, was a great way to get a little exercise in.

  • In a bowl combine the cream cheese, garlic salt, chicken, barbecue sauce, shredded cheddar cheese, and mayo. To mix it you can use a spoon, a mixer or do like I did and use your hands. Cream cheese and I have a love-hate relationship when it comes to it softening.

  • After all, this is mixed together, stir in the chopped cilantro. I also chopped this using the food processor.
  • Pour dip into a baking dish. I used 9X9 but you can use the size you have on hand.
  • Bake for 20-25 minutes at 350.
  • Garnish with a little extra barbecue sauce and some more cilantro.
  • Serve with bread, chips, or tortilla chips.
  • Enjoy

When you think of North Carolina, you think the Carolina Panthers, BBQ, and Banana Pudding. Well in honor of the Panthers amazing season here is a BBQ Chicken Dip.
Ingredients

My girls and the one lone boy, I say he is mine as he spends enough time over here visiting Mikaela that we just decided to adopt him 🙂 , loved it.

  1. The dip sounds delicious. I keep forgetting you live close to my brother (in Raleigh). Though he is a Saints fan at heart he will cheer for the Panthers unless they are playing.
