From Garden to Oven To Table Vegetable Casserole
If you are anything like us, right now and until the end of summer, you will be overwhelmed with fresh vegetables. We have a small garden but my husband also works for John Deere, as a mechanic. A lot of the farmers are so thankful that he gets their tractors up in running that they also share with him vegetables from their gardens.
Because of this, I have had to look for new ways to cook vegetables. Today I am going to share with you an easy vegetable casserole that is really yummy. I mean my youngest, Gracie ate it and loved it and she hates zucchini and squash!!!
From Garden To Oven To Table Vegetable Casserole
Ingredients Needed:
- Tomato
- Zucchini
- Yellow Squash
- Olive oil
- Italian seasoning
- lemon pepper
- sea salt
- garlic powder
- Mozzarella Cheese
Directions:
- Preheat oven to 375
- Slice your vegetables ( tomatoes, zucchini, and squash) thin.
- Place in layers in a casserole dish, Tomato, zucchini, and then squash.
- Drizzle on olive oil.
- Then sprinkle with Italian Seasoning, lemon pepper, sea salt, and garlic powder. ( The amount depends on your preferences)
- Top with mozzarella cheese.
- Bake at 375 for about 30 minutes
